Legacy format. Keys and Values are encoded into bytes via Codec

Migration format. Keys and Values are encoded into bytes via Codec
and structured into
an Apache Arrow columnar format.
Structured
New-style structured format, including structured representations of the K/V columns and the usual timestamp / diff encoding.
