Map a Confluent compatibility level onto its AWS Glue equivalent.

The sink’s COMPATIBILITY option is represented with the Confluent type throughout planning, even for Glue. Every Confluent level has a Glue analogue (the transitive levels map to Glue’s *All modes), so this is total. Glue’s DISABLED has no Confluent analogue and is rejected at CREATE SINK time, so it never reaches here.
